Duck Egg and Honey Mayonnaise

This mayonnaise especially works well with poultry dishes such as a fall chicken salad wih apples.

2 Duck Egg Yolks*
1 cup Canola Oil
2 ½ Tbs Lemon Juice
1 Tbs Honey*
1/2 tsp fresh Ginger (minced fine)*
Salt and white pepper to taste

  1. Place the egg yolks and lemon juice in a bowl
  2. Whisk the egg yolks until foamy and light in color
  3. Drizzle the oil into the egg yolks slowly whisking the entire time
  4. When the mixture is quite thick and all of the oil is incorporated, add the honey and ginger.
  5. Add salt and pepper to taste
